Dave,
go to the menu TOOLS>OPTIONS and select the FONTS2 tab, you will see the options there for custom graph fonts etc.

It sounds as if you are using the print option from the menu in runtime? If so, then there are indeed print and export options, export copies the selected graph to the clipboard for pasting into other applications. There may very well be another way, but if I read you right, then the following will work for your particular circumstance. The attached zip file has a Vensim and Excel file. The Excel file holds the 3 fraction values and ensures that they all add up to 1, Vensim reads the values from the excel file...
