Erik Mosekilde and Jeppe Sturis of the Technical University of Denmark,
along with colleagues from the Univ. of Chicago medical school, developed a
series of models and supporting clinical and experimental data on the human
insulin/glucose regulatory system. A key reference, including the model
equations, is

Sturis, J., K. S. Polonsky, E. Mosekilde and E. Van Cauter. 1991. Computer
Model for Mechanisms Underlying Ultradian Oscillations of Insulin and
Glucose. American Journal of Physiology 260 (Endocrinol. Metab. 23):
E801-E809.

A search of medline will reveal their later articles on this topic.

You might take a look at:

Jeppe Sturis, Kenneth S. Polonsky, Erik Mosekilde, and Eve van Cauter.
