I am developing custom graphs for use in a Venapp. I have currently used the Quick format and Normal. Neither appear to give me the flexibility in colour options for the background or font sizes.

Could I have some advice on where I can set these options if they are available either in the Control Panel editor or in the files?

go to the menu TOOLS>OPTIONS and select the FONTS2 tab, you will see the options there for custom graph fonts etc.
